Why Prices Differ Between Restaurants

Why Prices Differ Between Restaurants

Every price guide online, including this one, quotes figures that will not match your local restaurant exactly. That is not carelessness — it is how the pricing works.

Here is how much variation to expect and where it comes from.

The three sources of variation

Location economics. Rent, wages and local taxes all sit behind the plate price, and they differ enormously between a suburban site and a city centre. A dollar or two on a steak between restaurants in different states is normal; more than that between a suburb and a downtown location is also normal.

Print cycle. Menus are reissued periodically rather than continuously, so any photographed menu captures a moment. Beef prices move with commodity markets and steak pricing follows within a couple of cycles.

Third-party delivery. This is the largest single markup and a different category from the other two. App menu prices commonly run well above dine-in before service fees, delivery fees and tip are added on top.

  • Suburban restaurants — at or below the figures in this guide
  • City-centre, airport, high-rent — above them
  • Delivery apps — above both, substantially
  • Early Dine — reported $8.99 to $13.99 nationally
  • Calorie counts — identical everywhere

How much variation, concretely

Early Dine is the clearest example because it is widely reported. Independent sources currently put it anywhere between $8.99 and $13.99 depending on who checked and where. That is a 55% spread on the same promotion.

That spread reflects genuine local variation rather than one source being wrong, which is why this site quotes the figure from its source menu and says where it came from rather than presenting a national average.

What does not vary

Calorie counts. They do not move with rent, wages or commodity markets, and they are set by the recipe rather than by the restaurant. The nutrition data on this site will stay accurate considerably longer than the pricing will.

The structure of the menu — which items exist, what sizes they come in, how many sides are included — is national rather than local.

The free bread. That is everywhere.

Frequently asked

How far off might your prices be?

Typically within a dollar or two on a steak for a suburban restaurant, and further in a city centre or airport location.

Why are delivery app prices so much higher?

App menu pricing is set above dine-in to absorb the platform commission, before the service fee, delivery fee and tip you also pay.

Do calorie counts vary by location?

No. Recipes are national, so the nutrition figures hold everywhere even when prices do not.
