Most people compare delivery to dine-in by looking at the delivery fee. That is the smallest component of the difference.

The larger one is that the menu prices inside the app are already above the dine-in prices before any fee is applied.

Where the cost actually sits

Delivery platforms charge restaurants a commission on each order. Restaurants commonly recover that by listing higher prices inside the app than on the board, which means you pay part of the commission in the item price without seeing it as a fee.

Then the visible costs stack on top: a service fee as a percentage of the order, a delivery fee, sometimes a small-order fee, and a tip.

The result is that the total on a delivered order is frequently well above the same order eaten in, and the delivery fee line explains only a fraction of the gap.

What travels badly anyway

Anything fried loses its texture in transit — the Cactus Blossom, Chicken Critters, Fried Pickles and Tater Skins all soften.

Ribs, pulled pork and the country dinners travel comparatively well, since they are already sauced and slow-cooked.

The free bread does not travel at all, since it is a dine-in courtesy rather than an order item.

The middle option

Collection sits between the two. You pay dine-in menu prices with no platform markup and no fees, and you lose only the table service and the bread.

For a family order where the food is going on plates at home anyway, collection is substantially cheaper than delivery and the food is fresher for having spent less time in a box.
