From smallest to largest, the price per ounce falls by 36%. That is the widest within-cut spread on the menu, and it means the size decision matters more here than anywhere else.

The 11oz is the quiet sweet spot — it captures most of the per-ounce saving without being a genuinely large amount of food.

Why it is the lightest steak

Sirloin comes from the rear of the animal, a well-worked muscle group with little intramuscular fat. At roughly 42 calories per ounce it is close to half the calorie density of ribeye.

That leanness is why it costs less and why it needs more care in cooking. There is very little fat to keep it moist past medium, so ordering it well done produces a dry steak regardless of the kitchen.

Paired with green beans at 100 calories, a 6oz sirloin gives you a full steak dinner at around 450 calories — among the lightest complete meals the menu permits.

Where else it appears
