The Whole Menu in One Page: All 12 Sections

The board runs to twelve sections and 87 items, which produce 99 separately priced variants once the eight multi-size items are counted properly.
Here is each section, what it costs, and the one thing worth knowing about it.
The savoury sections
Just For Starters — 11 items, $3.99 to $12.99. Contains the heaviest item on the menu (Cactus Blossom, 2,250 calories) and the lightest starter by a wide margin (Grilled Shrimp, 360).
Hand-Cut Steaks — 10 cuts, $12.49 to $33.99. Six come in multiple sizes. The 16oz sirloin is the best value per ounce on the menu at $1.44.
Fall-Off-The-Bone Ribs — half slab $17.99, full slab $22.99. The full is better value per rib if you finish it.
Texas Size Combos — 12 pairings, $17.99 to $29.99, with a calorie spread from 520 to 1,510.
Chicken Specialties — 6 dishes within $1.50 of each other, containing the two lightest entrées on the menu.
Country Dinners — 5 plates, $10.99 to $16.49, including the cheapest adult entrée on the board.
Dockside Favorites — 3 dishes, 6 portions, and the only entrée carrying meaningful omega-3s.
Burgers & Sandwiches — 6 items, $11.49 to $12.99, all above 1,000 calories because the fries are included.
The supporting sections
Salads — 8 options, $4.99 to $16.99. The section most likely to mislead: the Chicken Caesar is 1,100 calories and the Steakhouse Filet Salad 1,340.
Sides & Extras — 12 sides, all $2.99 except Texas Red Chili at $3.99. Calories run 100 to 740, so price carries no information and calories carry all of it.
Desserts — 3 items, all $6.99, from 800 to 1,200 calories.
Kids & Ranger Meals — 9 options across two tiers, $4.99 to $10.99. Contains the lightest protein on the entire menu at 110 calories.

What is not a section but matters anyway
Early Dine is a separate reduced-price list of 11 entrées at $11.99, cutting across the steak, chicken and salad sections. Where available, it is the cheapest route to a full entrée.
Smother Your Steak at $2.29 adds mushrooms, onions, jack cheese or brown gravy to any steak.
The free bread with cinnamon butter appears on no section and no price list, which is exactly why most people leave it out of their accounting.
