How to Read the Calorie Numbers Properly

The calorie figures on this menu are reliable — spot-checks against published nutrition data match exactly. The problem is not accuracy, it is what each number covers.
Different sections count different things, and comparing across them without adjusting produces the wrong answer.
What each figure includes
Entrée figures cover the entrée alone. The two included sides are counted separately and add between 200 and 1,480 calories depending what you choose. This is the single largest source of underestimation.
Salad figures for entrée salads include the dressing, because the dressing is integral to the dish. Side salad figures do not.
Burger and sandwich figures do include the steak fries, because they come as part of the plate. That is why the whole section starts above 1,000 calories.
Sized items are quoted per size. A Hand-Cut Sirloin is 250 at 6oz and 670 at 16oz — a single figure for "sirloin" would describe nobody's order.

Building an honest total
Take the entrée figure, add two sides, and add anything you ordered separately. A 6oz sirloin at 250 with a loaded baked potato at 530 and seasoned rice at 360 is 1,140 — not 250.
Add a shared starter divided by the number of people sharing. A Cactus Blossom split four ways is 560 each, which is more than the steak.
Add the bread. Rolls with cinnamon butter arrive unordered and appear on no list, which is exactly why they escape most people's accounting.
Where ranges appear and why
Some items show a range rather than a figure: the Combo Appetizer at 920–1,380, Beef Tips at 960–1,060, the Country Veg Plate at 400–1,580.
These are dishes where you make a choice inside the dish. The Combo Appetizer depends which three items you pick; the Veg Plate depends which four sides.
The Country Veg Plate has the widest range on the menu, and it is entirely down to whether you choose green beans or loaded potatoes.
