Chicken Critters — What They Are and Who Should Order Them

The adult basket is the main event: a substantial portion of tenders with two included sides and a dipping sauce. This is a full entrée and it is priced as one.

The kids version is smaller, comes with one side, and is priced accordingly. It is a genuine child portion rather than a slightly reduced adult one, which is worth knowing if you are ordering it for an older child who eats properly — a hungry twelve-year-old will finish it and look around.

The Critter salad puts the same tenders on greens, and it is the version people underestimate. It reads as the sensible order and it is not automatically lighter, because fried chicken on lettuce with a creamy dressing is still fried chicken with a creamy dressing. It is a better order for someone who wants both, not for someone who wants a light meal.

It means the batter goes on in the restaurant rather than arriving pre-coated and frozen. The visible consequence is irregularity — the tenders are not uniform, the coating varies in thickness, and there are craggy bits that catch more oil and go crisper.

That irregularity is the point. A uniform frozen tender is consistent and slightly dull; a hand-battered one has range across a single piece. It also means variation between visits, which cuts both ways.

It is genuinely better than the frozen equivalent, and it is one of the few places on the menu where a preparation claim shows up clearly on the plate rather than just in the description.

Honey mustard is the default that most people take and it is the safe answer. It is sweet, it is mild, and it does not compete with the batter.

Barbecue is the better pairing if you want the sauce to do something, because the smoke works against the fried coating in a way honey mustard does not.

The cajun horseradish that comes with the Rattlesnake Bites is available if you ask, and it is the most interesting option on the table. It is also considerably hotter than anything the menu suggests goes with tenders, so try a small amount first.

Ask for sauce on the side regardless. Tenders sitting in sauce lose their crispness within a few minutes, and crispness is the entire reason to order them.

Order them if you do not want steak and you want something the kitchen is genuinely good at. This is not a consolation item — it is one of the better-executed things on the menu.

Order them for a child over about ten as an adult portion shared, rather than as a kids meal each, if you have two children who both want tenders. The adult basket split between two older children with an extra side is usually more food for less money.

Do not order them if you are trying to keep the meal light, and particularly do not order the salad version believing it solves that problem. The Herb Crusted Chicken at around 260 calories is the actual light chicken option on the menu, and it is a completely different dish.

Fried chicken with two fried or heavy sides is a monotonous plate. The tenders are already crisp, salty and rich, and a second beige thing next to them adds nothing you were not already getting.

A green side does more here than almost anywhere else on the menu. Something crisp resets your palate between bites and makes the last few tenders as good as the first two, which is the actual measure of whether a fried plate was well ordered.

The other pairing worth knowing is a plain baked potato rather than a loaded one. The tenders and the dipping sauce are supplying all the richness the plate needs, and adding cheese and bacon alongside them is the point at which a good order becomes a heavy one.
